Chef Koji Sato, a Hokkaido native, trained at Sushi Shin in Nishiazabu and opened his own eight-seat room near Onarimon in 2018. He goes for thick cuts and generously sized nigiri, careful work on small fish like kohada, kasugo and aji, and rice made from an old Hokkaido variety cooked in a traditional hagama pot. It holds a 2026 Tabelog Bronze Award.
